MUKKALA PULUSU (Seasonal Mixed Vegetable )

Ingredients 

100 Gm Bottle Gourd
100 Gm Red Pumpkin 
2 Drumsticks 
100 Gm Big Brinjal
100 Gm Lady Finger 
1/2 tsp Turmeric Powder
1/2 tsp Red Chilli Powder 
50 ml Tamarind pulp
A pinch of Asafoetida 
Salt to taste 
Coriander leaves to Garnish

For the Tempering 
3 tsp Coconut oil 
1/4 tsp Mustard Seeds 
1/4 tsp Cumin Seeds 
10 Curry Leaves 
3 Whole Red Chillies 

For the Spice Mixture 
1 tsp Chana Dal 
1 tsp Coriander Seeds 
1/4 tsp Fenugreek Seeds 
1/4 tsp Cumin Seeds 
2 dry Red Chillies 



Method:

Peel and cut the vegetable to chunk . 

In a pan , add the vegetable with some water . Add salt  and turmeric powder and give it a boil . Cook the the vegetables are done . 

On the other side , dry roast the spices and grind to powder . 
Once the vegetables are done , add the tamarind water and red chilli powder along with asafoetida . 
Mix little water to the ground mixture and add to the gravy . Mix well . 

For the tempering , heat oil and add the ingredients of the tempering . Pour over the vegetable and cover immediately to capture the flavour . Serve hot !!
