Well we all know eggplant is very healthy and should be included in our diet . It’s is high in fibre and also helps in reducing weight . This small little vegetable is packed with lots of nutrients .
In Maharashtra it is consumed in a high scale and moreover we make Kala masala baingan , baingan Rassa . Etc . Talking about Punjab Baingan ka Bharta is most versatile dish which is found everywhere .

Being a Punjabi I also am a big fan of this dish . Then moving to Hyderabad the nawabs has this eggplant in their own style as Khatta baingan . Kashmiri names it as wangan and Bengal as Benguela Bhaja .

This all variety is of this small vegetable which is eaten all over India .
Let me introduce to all of you a new preparation of own small eggplant .
Hey I forgot to tell it’s also known as 1 leg murga .
So no more of talks and let me share the recipe !!!


                                                             "Patiala Baingan"




Ingredients 

4 Red dried chillies 
2 tbsp Desicated Coconut , Grated 
1 tsp cumin seeds
1 tsp Fennel Seeds 
1 tsp nigella Seeds / Kalongi
2 tbsp vegetable oil
1/2 tsp mustard seeds
2 curry leaves 
2 tsp Garlic Paste 
1 Cup Water 
6-6 eggplants , stem ends trimmed , Slit into 4 and soaked I. Salt water 
2 tbsp tamarind paste 
Salt to taste 
2 tbsp fried onion / barista




Method :

In a pan, over medium flame, dry roast dry red chillies, dessicated coconut, cumin seeds, fennel seeds and nigella seeds. 

Once the aroma is felt in the kitchen, transfer to a spice grinder and allow to cook. Grind to fine powder.

Return to the pan , add oil, add the mustard seeds , curry leaves and allow to crackle.
Add the garlic paste and ground spice and mix well. 
Add the water and allow to boil. 

Slowly add the egg plant and cover and cook till done .it will take approx 20 minutes .
Lastly add the salt and tamarind water and mix well . 

Remove and garnish with Barista / Fried Onion. 

Serve with Rice / Chapati and enjoy this dish.
