Achaari Mutton



Achaar is one of the staple dish of India. No food is complete without pickle. Every community has a recipe for their pickle. Every state has a speciality of pickle. A plate without a pickle is like a dish without salt. I am personally a big fan of eating pickle and I try everytime something  new. So let me share this recipe which come from Punjab.

  


" Achaari Mutton" 




Ingredients

500 gms Mutton, cut into pieces 
Tempering 
1/2 tsp Fenugreek seeds
1 tsp cumin seeds 
1 tsp onion seeds
1 tsp fennel seeds
1/2 tsp carom seeds
1 tsp mustard seeds
4_5 dry red chillies 
Other ingredients 
3 sliced onion
1 tsp ginger chopped 
11/2 tsp garlic chopped 
1 cup yogurt
1 tbsp gram flour 
11/2 tsp red chilli powder 
1 tsp turmeric powder 
1 tsp coriander powder 
Salt to taste 
1 tbsp lemon juice
2 tbsp mustard oil 
Coriander to garnish 


Method :
Wash the mutton and keep aside .
Heat mustard oil till smoky. Switch off the gas and allow to cool. 
Reheat the oil and add the tempering . 
Allow it to crackle .
Add the sliced onions and cook till brown . Add the ginger garlic and saute .
Add the dry spices and with a dash of water. 
Add the meat and cover and cook on low flame till it leaves its juices .
Put the flame on high and cook till the oil leaves .
Mix yogurt with gram flour and add to the meat and cook till meat is done completely. 
Adjust the seasoning and add the lemon juice. 
Garnish with coriander and enjoy the meat with Naan.
